Cooking in Italian families has been a long passed down tradition for centuries. Most families have one recipe that is passed down from generation to generation and enjoyed by everyone in the family. Most Italian restaurants get their roots right from the family, and Leon’s in no different. Being in business since 1938, it started with our families recipes and now it has become something we could never have dreamed of, all our ancestors would be extremely proud that people, still today, are tasting their delicious and original dishes. Not only do families cook together, they eat together as well. Most Italian families eat for many hours in one given sitting. Meal time is also a time to reconnect after a long day and celebrate being together. Lots of food is being passed from person to person, wine is usually flowing, and everyone is in good spirits. When it comes to Italian bites, cheese is a staple in almost every recipe, and for good reason. Italians have been perfecting the art of making cheese and each one is as delectable as the next. Italy has been the king of producing cheese for many centuries. When we think of cheese, most of us just think of a slice of American or a block of cheddar. In Italy, cheese comes in all types of flavors and textures. One of the most popular cheeses is fresh Mozzarella. Mozzarella cheese is a soft cheese, which is usually the shape of a ball and kept in a liquid substance to keep it fresh. Its flavor is light and airy and delicious with almost any dish. In America, most of us know mozzarella to be on pizza.
