CARROT CAKE OATMEAL
Oatmeal is my favorite breakfasts. You can make it countless different ways and it’s filling enough to keep me satisfied until my next meal. While browsing the internet I’ve stumbled across a number of different recipes for carrot cake oatmeal. Never one to shy from a new edible idea, I decided to try out my own version, and it turned out so.good. The secret ingredient? Freshly grated nutmeg. Don’t skip this!
Carrot Cake Oatmeal Recipe
1 medium carrot, finely grated
¾ cup almond milk
1 tablespoon full-fat coconut milk cream (or use more almond milk)
1 teaspoon ground cinnamon, to taste
¼ teaspoon fresh grated ginger
1/8 teaspoon freshly grated nutmeg
pinch of salt
½ cup regular oats
1 teaspoon pure vanilla extract
2 tablespoons chopped walnuts, divided
2 tablespoons raisins, divided
pure maple syrup
Whisk together carrot, almond milk, coconut cream, spices and salt in a small pan over medium heat. Stir in oats, and turn heat to medium-low. Let cook until the oats have fully absorbed the liquid, about 8 minutes. Add vanilla, remove from heat and let sit 1 minute. Divide into two bowls and top with walnuts, raisins and maple syrup to taste. Tell the truth great meal for a leg day workout!!
